Why don't we just evolve to counter the effects of global warming?

I've been trying to grow gills behind my ears for over 40 years now ... I thought I had a slit started, but it just turned out to be a wrinkle ... I figure I can stay cool in the ocean ... with all those icebergs melting, it should be nice and refreshing.
